Powdered sugar is made by grinding cane sugar that has been refined to varying degrees: light, medium, or dark. The powdered sugar produced in this way is almost white, but when dissolved again, it returns to its original color.
Powdered sugar dissolves instantly in liquid. It is ideal for decorating pastries (icing). It can also be used to dust cakes and pies, or to sweeten beaten egg whites.
