Le sucre glace ainsi obtenu est quasiment blanc, mais remis en solution, le sucre reprend sa couleur initiale.<\/p>\n<p>Les cristaux sont r\u00e9duits en poudre impalpable (ouverture moyenne: 0,02 \u00e0 0,06 mm). le sucre glace peut prendre en masse. C\u2019est pourquoi, s\u2019il n\u2019est pas utilis\u00e9 dans les jours qui suivent le broyage, nous recommandons l\u2019ajout d\u2019amidon (de pomme de terre ).<\/p>\n<p>Le sucre glace est instantan\u00e9ment soluble dans une solution liquide. Il convient parfaitement pour la d\u00e9coration de p\u00e2tisseries (op\u00e9ration de gla\u00e7age). Il sert aussi pour saupoudrer les g\u00e2teaux, les tartes, ou encore pour sucrer les blancs en neige.<\/p>\n<p><strong>Utilisations : <\/strong>Meringues, Calissons, Macarons, Nougats, Fourrage,
