The product we offer is made by grinding granulated sugar. The crystals are ground into a fine powder (average particle size: 0.03 to 0.06 mm).
Amylaceous powdered sugar contains cornstarch, which acts as an anti-caking agent. Because powdered sugar has a very fine grain size, it is more prone to clumping than other types of sugar.
The sweetness of powdered sugar is roughly the same as that of granulated sugar, but for the same volume, powdered sugar weighs 1.5 times less than granulated sugar.
Powdered sugar dissolves instantly in liquid.
It is ideal for decorating pastries (a process known as icing, hence its name). It is also used to sprinkle on cakes and pies, or to sweeten beaten egg whites.
